- 4 chicken breasts
- 1 ripe mango
- Zest of 1 lime
- 1 tbsp lime juice
- 2 tbsp olive oil
- 1 tbsp coconut aminos
- 1 tsp hot sauce
- 1 tbsp maple syrup or honey
- Pinch of salt
- Pinch of black pepper
Instructions
- In a blender, combine mango, lime zest, lime juice, olive oil, coconut aminos, hot sauce, maple syrup (or honey), salt, and pepper. Blend until smooth.
- Reserve ¼ cup of the marinade in a glass container and refrigerate for later use.
- Place chicken breasts in a bowl and coat thoroughly with the marinade. Cover and refrigerate for 4–8 hours.
- Preheat grill to medium-high heat. Remove chicken from marinade and place on the grill.
- Cook for about 10 minutes per side, or until the internal temperature reaches 165°F.
- Remove chicken from grill and let rest for 5 minutes.
- Brush the reserved marinade over the chicken before serving.
Notes
- For extra flavor, marinate overnight but do not exceed 8 hours.
- Chicken thighs can be used instead of breasts for a juicier result.
- No grill? Use a grill pan or bake at 400°F for 20–25 minutes.
- Add extra hot sauce or chili flakes for more heat.
