- 8 oz burrata cheese
- 4 cups mixed greens (arugula, spinach, or spring mix)
- 1 cup cherry tomatoes, halved
- ¼ cup pistachios (or walnuts/almonds), roughly chopped
- 2 tbsp olive oil
- 1 tbsp red vinegar
- 2–3 tbsp balsamic glaze
- 2 tbsp fresh herbs (basil, dill, oregano, or parsley), chopped
- Salt and black pepper, to taste
Instructions
- Preheat a grill or grill pan over medium-high heat.
- Lightly brush peach halves with olive oil.
- Grill peaches cut-side down for 2–3 minutes until charred, then flip and cook another minute. Remove and set aside.
- Arrange mixed greens on a large serving platter.
- Add cherry tomatoes evenly over the greens.
- Place grilled peaches on top.
- Tear burrata into pieces and nestle throughout the salad.
- In a small bowl, whisk olive oil, red wine vinegar, salt, pepper, and fresh herbs.
- Drizzle dressing over the salad.
- Finish with pistachios and a generous drizzle of balsamic glaze. Serve immediately.
Notes
- Use slightly firm peaches so they hold their shape when grilling.
- Let burrata sit at room temperature for 10–15 minutes before serving for the creamiest texture.
- Toast nuts lightly for extra crunch and flavor.
- Add grilled chicken or prosciutto for a more filling meal.
