Description

This Grilled Peach Burrata Salad is a fresh, vibrant summer dish featuring juicy grilled peaches, creamy burrata, crisp greens, and a tangy balsamic glaze. Perfect for light lunches, elegant dinners, or entertaining guests with minimal effort.


Ingredients

  • 34 firm peaches, halved and pitted
  • 8 oz burrata cheese
  • 4 cups mixed greens (arugula, spinach, or spring mix)
  • 1 cup cherry tomatoes, halved
  • ¼ cup pistachios (or walnuts/almonds), roughly chopped
  • 2 tbsp olive oil
  • 1 tbsp red vinegar
  • 23 tbsp balsamic glaze
  • 2 tbsp fresh herbs (basil, dill, oregano, or parsley), chopped
  • Salt and black pepper, to taste

Instructions

  1. Preheat a grill or grill pan over medium-high heat.
  2. Lightly brush peach halves with olive oil.
  3. Grill peaches cut-side down for 2–3 minutes until charred, then flip and cook another minute. Remove and set aside.
  4. Arrange mixed greens on a large serving platter.
  5. Add cherry tomatoes evenly over the greens.
  6. Place grilled peaches on top.
  7. Tear burrata into pieces and nestle throughout the salad.
  8. In a small bowl, whisk olive oil, red wine vinegar, salt, pepper, and fresh herbs.
  9. Drizzle dressing over the salad.
  10. Finish with pistachios and a generous drizzle of balsamic glaze. Serve immediately.

  • Use slightly firm peaches so they hold their shape when grilling.
  • Let burrata sit at room temperature for 10–15 minutes before serving for the creamiest texture.
