- 1 cup cherry tomatoes
- 1 red onion

Instructions
- In a bowl, whisk together olive oil, balsamic vinegar, oregano, salt, and pepper to make the marinade.
- Slice bell peppers into strips, cut zucchini into rounds, and chop red onion into chunks.
- Place vegetables in a large bowl or zip-top bag and pour the marinade over them. Toss to coat evenly.
- Let the vegetables marinate for at least 15 minutes.
- Preheat grill to medium-high heat and lightly oil the grates or a grill basket.
- Grill vegetables for about 10 minutes, turning occasionally, until tender and slightly charred.
- Remove from grill, garnish with fresh herbs, and serve warm.
