  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin

  • 1 tablespoon avocado oil

For the Bowls:

  • 2 cups cooked jasmine rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1 large avocado, sliced
  • 1/2 cup pickled red onions
  • Optional: sliced radishes or cucumber

Instructions

  1. Make the Chimichurri:
    Finely chop parsley and cilantro by hand. In a bowl, mix herbs, garlic, onion, and red pepper flakes. Add red vinegar and let sit for 5 minutes. Stir in olive oil, salt, and pepper. Set aside.
  2. Cook the Ground Beef:
    Heat avocado oil in a skillet over medium-high heat. Add ground beef in an even layer and let it sear undisturbed for 3–4 minutes. Break into chunks, add spices, and cook until browned and slightly crispy.
  3. Prepare the Base:
    Cook and fluff rice or quinoa while the beef finishes cooking.
  4. Add Chimichurri to Beef:
    Turn off heat and stir 2 tablespoons of chimichurri into the hot beef.

    Layer rice, beef, tomatoes, avocado, and pickled onions. Drizzle extra chimichurri on top and serve.
