Ingredients

  • 4 medium zucchinis, halved lengthwise and scooped out

  • 1 pound ground beef

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 cup tomato sauce

  • 1 cup shredded cheese (mozzarella, cheddar, or parmesan)

  • 1 tablespoon olive oil

  • 1 teaspoon Italian seasoning

  • ½ teaspoon paprika

  • Salt and pepper to taste

  • Optional garnish: fresh basil or parsley


Instructions

Step 1 – Prepare the Zucchini

Preheat oven to 375°F (190°C).
Slice zucchinis in half lengthwise and scoop out the center to create zucchini boats.
Brush lightly with olive oil and place on a baking sheet.
Pre-bake for 5–7 minutes to soften slightly.

Step 2 – Cook the Filling

Heat olive oil in a large skillet over medium heat.
Sauté diced onion until translucent, about 3 minutes.
Add garlic and cook for 30 seconds until fragrant.
Add ground beef and cook until browned, breaking it apart as it cooks.
Drain excess fat.

Step 3 – Add the Sauce

Remove zucchini from oven.
