  • 1 cup rolled oats
  • 1/2 cup flour (all-purpose or whole wheat)
  • 1/3 cup honey or maple syrup
  • 1/4 cup milk (dairy or plant-based)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • Optional: 1/4 cup chocolate chips or chopped nuts

Instructions

  1. Preheat oven to 350°F and line a muffin tin with paper liners.
  2. In a large bowl, mash the bananas until smooth.
  3. Add egg, milk, vanilla, and honey. Mix until combined.
  4. Stir in oats, flour, baking powder, baking soda, cinnamon, and salt.
  5. Fold in chocolate chips or nuts if using.
  6. Divide batter evenly into muffin cups, filling about 3/4 full.
  7. Bake for 18–22 minutes or until a toothpick comes out clean.
  8. Let cool for 5 minutes, then transfer to a wire rack.

Notes

Use very ripe bananas for the best natural sweetness.

Swap honey for maple syrup to keep it refined sugar-free.

Store in an airtight container for up to 3 days or freeze for later.
