- 1 large egg

- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- Optional: 1/4 cup chocolate chips or chopped nuts
Instructions
- Preheat oven to 350°F and line a muffin tin with paper liners.
- In a large bowl, mash the bananas until smooth.
- Add egg, milk, vanilla, and honey. Mix until combined.
- Stir in oats, flour, baking powder, baking soda, cinnamon, and salt.
- Fold in chocolate chips or nuts if using.
- Divide batter evenly into muffin cups, filling about 3/4 full.
- Bake for 18–22 minutes or until a toothpick comes out clean.
- Let cool for 5 minutes, then transfer to a wire rack.
Notes
Use very ripe bananas for the best natural sweetness.
Swap honey for maple syrup to keep it refined sugar-free.
