This Healthy Ground Turkey Sweet Potato Bake is a wholesome one-pan dinner packed with lean ground turkey, roasted sweet potatoes, spinach, and warm spices. Easy to prepare and perfect for meal prep, this comforting casserole delivers a delicious balance of protein, vegetables, and flavor in every bite.

  • 3 medium sweet potatoes, peeled and diced (about 1.5 lbs)
  • 1 medium onion, chopped
  • 1 large bell pepper, chopped
  • 2 cups fresh spinach
  • 1 lb lean ground turkey
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil, divided
  • ½ cup shredded cheddar cheese (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Peel and dice sweet potatoes into bite-sized cubes.
  3. Toss sweet potatoes with 1 tablespoon olive oil, paprika, garlic powder, onion powder, salt, and pepper.
  4. Spread on a baking sheet and roast for 20–25 minutes until tender and lightly golden.
  5. Heat remaining olive oil in a large skillet over medium heat.
  6. Sauté onion and bell pepper until softened, about 4 minutes.
  7. Add ground turkey and cook for 6–8 minutes, breaking it apart until fully browned.
  8. Stir in cumin and season with additional salt and pepper to taste.
  9. Layer roasted sweet potatoes, turkey mixture, and spinach in a baking dish.
  10. Sprinkle cheddar cheese on top if using.
  11. Bake for 10–15 minutes until heated through and cheese is melted.
  12. Rest for 5 minutes before serving.

Notes

Ground chicken can be substituted for ground turkey.

Kale works well in place of spinach.

For extra vegetables, add zucchini, mushrooms, or carrots.

The casserole stores well for meal prep and tastes even better the next day.

Cheese can be omitted for a lighter version.
