Instructions
- In a shallow dish, combine Dijon mustard, lemon juice, garlic, rosemary, and black pepper.
- Add the chicken breasts and turn to coat evenly in the marinade.
- Cover and marinate for at least 1 hour in the refrigerator or 20 minutes at room temperature.
- Preheat oven to 375°F.
- Place chicken in a baking dish and cover.
- Bake for 25 minutes, or until the chicken is cooked through.
- Optional: Remove cover during the last 5–7 minutes for a lightly golden finish.
- Let rest for 5 minutes before serving.
Notes
For a milder flavor, slightly reduce the lemon juice.
For added color, sear the chicken for 2–3 minutes per side before baking.
Fresh rosemary gives a brighter flavor, but dried works well too.
Letting the chicken rest helps keep it juicy and tender.
