Description
This Hobo Casserole Ground Beef Recipe is a cozy, budget-friendly dinner made with layers of seasoned ground beef, tender potatoes, and melty cheddar cheese baked until golden and bubbly. Perfect for busy weeknights and comforting family dinners.
Ingredients
Scale
- 1 lb ground beef
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4–5 medium potatoes, thinly sliced
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon paprika
- Salt and pepper, to taste
- 1/2 cup beef broth
- 1/4 cup milk or heavy cream (optional)
- Fresh parsley, for garnish
Instructions
- Preheat oven to 375°F and grease a 9×13-inch baking dish.
- Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned. Drain excess grease.
- Stir in onion and garlic. Cook for 3–4 minutes until softened. Season with Italian seasoning, paprika, salt, and pepper.
- Optional but recommended: parboil potato slices for 5–7 minutes to help them cook evenly.
- Layer half the potatoes in the baking dish. Top with half the beef mixture and some cheese. Repeat layers.
- Pour beef broth and milk around the edges of the casserole.
- Cover tightly with foil and bake for 45 minutes.
- Remove foil and bake another 15–20 minutes until potatoes are tender and cheese is golden and bubbly.
- Garnish with parsley and serve warm.
Notes
Slice potatoes very thin for even cooking.
Parboiling the potatoes helps avoid crunchy centers.
Avoid adding too much broth to prevent a watery casserole.
Freshly shredded cheese melts better than pre-shredded cheese.
Let casserole rest for 5–10 minutes before serving for cleaner slices.
