Description

This Hobo Casserole Ground Beef Recipe is a cozy, budget-friendly dinner made with layers of seasoned ground beef, tender potatoes, and melty cheddar cheese baked until golden and bubbly. Perfect for busy weeknights and comforting family dinners.

Ingredients

Scale
  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 45 medium potatoes, thinly sliced
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • 1/2 cup beef broth
  • 1/4 cup milk or heavy cream (optional)
  • Fresh parsley, for garnish

Instructions

  1. Preheat oven to 375°F and grease a 9×13-inch baking dish.
  2. Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned. Drain excess grease.
  3. Stir in onion and garlic. Cook for 3–4 minutes until softened. Season with Italian seasoning, paprika, salt, and pepper.
  4. Optional but recommended: parboil potato slices for 5–7 minutes to help them cook evenly.
  5. Layer half the potatoes in the baking dish. Top with half the beef mixture and some cheese. Repeat layers.
  6. Pour beef broth and milk around the edges of the casserole.
  7. Cover tightly with foil and bake for 45 minutes.
  8. Remove foil and bake another 15–20 minutes until potatoes are tender and cheese is golden and bubbly.
  9. Garnish with parsley and serve warm.

Notes

Slice potatoes very thin for even cooking.

Parboiling the potatoes helps avoid crunchy centers.

Avoid adding too much broth to prevent a watery casserole.

Freshly shredded cheese melts better than pre-shredded cheese.

Let casserole rest for 5–10 minutes before serving for cleaner slices.
