These Honey Chipotle Grilled Chicken Skewers are sweet, smoky, and slightly spicy, featuring juicy grilled chicken coated in a bold honey chipotle glaze—perfect for easy dinners or summer BBQs.

- 1/4 cup honey
- 1/4 cup chipotle chilies in adobo sauce
- 2 tablespoons apple cider vinegar (or lime juice)
- 1 tablespoon soy sauce
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- Fresh cilantro or parsley, chopped (optional garnish)
- Green onions, sliced (optional garnish)
Instructions
- In a blender or food processor, combine honey, chipotle chilies with adobo sauce, apple cider vinegar (or lime juice), soy sauce, garlic, and cumin. Blend until smooth.
- Reserve half of the sauce for serving.
- Place chicken in a bowl or zip-top bag and pour remaining sauce over it. Toss to coat evenly.
- Marinate for at least 20 minutes or up to overnight in the refrigerator.
- If using wooden skewers, soak them in water for 30 minutes.
- Thread chicken pieces onto skewers.
- Preheat grill to medium-high heat (about 400°F).
- Grill skewers for 2–5 minutes per side, turning occasionally, until chicken is cooked through and lightly charred.
- Remove from grill and let rest for 2–3 minutes.
- Garnish with cilantro and green onions if desired.
- Serve with reserved honey chipotle sauce for dipping.
Notes
- Adjust spice level by reducing or increasing chipotle peppers.
- Chicken thighs stay juicier, but breasts work well too.
- Watch closely while grilling—honey can caramelize quickly.
- No grill? Use a grill pan or broiler instead.
