Ingredients

  • 1/4 cup honey
  • 1/4 cup chipotle chilies in adobo sauce
  • 2 tablespoons apple cider vinegar (or lime juice)
  • 1 tablespoon soy sauce
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • Fresh cilantro or parsley, chopped (optional garnish)
  • Green onions, sliced (optional garnish)

Instructions

  1. In a blender or food processor, combine honey, chipotle chilies with adobo sauce, apple cider vinegar (or lime juice), soy sauce, garlic, and cumin. Blend until smooth.
  2. Reserve half of the sauce for serving.
  3. Place chicken in a bowl or zip-top bag and pour remaining sauce over it. Toss to coat evenly.
  4. Marinate for at least 20 minutes or up to overnight in the refrigerator.
  5. If using wooden skewers, soak them in water for 30 minutes.
  6. Thread chicken pieces onto skewers.
  7. Preheat grill to medium-high heat (about 400°F).
  8. Grill skewers for 2–5 minutes per side, turning occasionally, until chicken is cooked through and lightly charred.
  9. Remove from grill and let rest for 2–3 minutes.
  10. Garnish with cilantro and green onions if desired.
  11. Serve with reserved honey chipotle sauce for dipping.

  • Adjust spice level by reducing or increasing chipotle peppers.
  • Chicken thighs stay juicier, but breasts work well too.
  • Watch closely while grilling—honey can caramelize quickly.
