Sticky Honey Garlic Chicken Noodles

Description

These Honey Garlic Chicken Noodles are a quick, flavor-packed dinner made with tender noodles, juicy ground chicken, and a sticky sweet-savory sauce. Perfect for busy weeknights and better than takeout!


Ingredients

  • 4 cups (170g) coleslaw mix
  • 2 teaspoons (10g) olive oil
  • 1 pound ground chicken breast
  • 3 tablespoons (63g) honey
  • 2 tablespoons (30g) chili garlic sauce or Sriracha
  • 2 tablespoons (30g) coconut aminos or low sodium soy sauce
  • 2 tablespoons (30g) Chinese black vinegar or balsamic vinegar
  • 2 teaspoons crushed ginger (or 2 frozen ginger cubes)
  • ¼ cup water
  • 2 packs (95g each) instant noodles (ramen or knife-cut style)
  • Chives or scallions, for garnish
  • Toasted sesame seeds, for garnish

Instructions

  1. Bring a pot of water to a boil for the noodles.
  2. Heat olive oil in a large nonstick pan over medium heat. Add coleslaw mix and a pinch of salt. Cook for 3–4 minutes until slightly browned but still crisp. Remove and set aside.
  3. In the same pan, cook ground chicken for 2–3 minutes per side until golden. Break apart and cook through.
  4. Add honey, chili garlic sauce, coconut aminos, vinegar, ginger, and water. Stir and simmer for 3–4 minutes until thick and slightly caramelized.
  5. Cook noodles according to package instructions. Reserve ½ cup noodle water, then drain.
  6. Add noodles, chicken, and veggies together. Toss well, adding reserved water as needed to loosen the sauce.
  7. Garnish with scallions and sesame seeds. Serve immediately.

Notes

  • Adjust spice level with more or less chili garlic sauce.
  • Use reserved noodle water to control sauce consistency.
  • Swap ground chicken with turkey, shrimp, or tofu if desired.
  • Don’t over-stir the sauce while cooking—it helps create that sticky texture.
