Instructions

  1. In a small bowl, whisk together honey, lime juice, lime zest, olive oil, garlic, cumin, smoked paprika, salt, and pepper.
  2. Place the chicken in a shallow dish or resealable bag. Pour the marinade over the chicken and coat well. Marinate for at least 30 minutes or up to 12 hours in the refrigerator.
  3. In a medium bowl, combine diced mango, red onion, jalapeño, cilantro, and lime juice. Season with salt and pepper. Stir gently and let sit for 10–15 minutes.
  4. Cook the chicken using your preferred method:
    • Grill over medium-high heat for 5–6 minutes per side.
    • Pan-sear for 5–7 minutes per side.
    • Bake at 400°F (200°C) for 20–25 minutes.
  5. Cook until the chicken reaches an internal temperature of 165°F (75°C).
  6. Let the chicken rest for 5 minutes before slicing.
  7. Serve over rice, quinoa, salad greens, or tortillas.
  8. Top generously with mango salsa and serve with lime wedges.
