These Honey Sriracha Salmon Bowls combine tender, caramelized salmon with fluffy rice, creamy avocado, crisp cucumber, edamame, and spicy sriracha mayo. A quick, colorful dinner packed with sweet, savory, and spicy flavor.

  • 4 salmon fillets (46 ounces each), cut into bite-sized cubes
  • 3 tablespoons low-sodium soy sauce or tamari
  • 2 tablespoons honey
  • 2 tablespoons sriracha
  • 2 teaspoons minced garlic
  • 3 tablespoons water
  • 2 cups cooked white rice
  • 1 avocado, sliced
  • 1 cucumber, sliced
  • 1 cup edamame, cooked
  • 1/2 cup sriracha mayo
  • 1 teaspoon cooking oil, or as needed


Instructions

  1. Place the salmon fillets on a cutting board and cut them into evenly sized, bite-sized cubes.
  2. In a small bowl, whisk together the soy sauce, honey, sriracha, minced garlic, and water until combined.
  3. Heat a large non-stick skillet over medium-high heat with a small drizzle of oil.
  4. Add the salmon pieces in a single layer. Cook for 3–4 minutes, turning gently, until lightly browned.
  5. Pour the honey-sriracha glaze over the salmon. Cook for another 2–3 minutes, gently tossing until the sauce thickens and coats the salmon.
  6. Divide the cooked white rice evenly among four bowls.
  7. Top each bowl with the glazed salmon.
  8. Add sliced avocado, cucumber, and cooked edamame.
  9. Drizzle with sriracha mayo and serve immediately.

Notes

  • Use low-sodium soy sauce to prevent the glaze from becoming too salty.
  • For less heat, reduce the sriracha to 1 tablespoon and adjust to taste.
  • Don’t overcrowd the skillet; the salmon browns better when the pieces have space.
  • Prepare the rice and vegetables before cooking the salmon because the fish cooks quickly.
  • Cook salmon to an internal temperature of 145°F.
