  • 1 teaspoon smoked paprika

For the Sweet Potatoes:

  • 1 medium sweet potato, peeled and diced
  • 1 tablespoon olive oil
  • Salt and pepper

For the Bowls:

  • 1 cup cooked rice (white, brown, or cauliflower rice)
  • 2 large eggs
  • 1 avocado, sliced
  • 1/4 cup crumbled queso fresco or feta
  • Fresh cilantro, chopped
  • Sesame seeds (optional)
  • Extra hot honey or hot sauce

Instructions

  1. Preheat oven to 425°F (220°C). Toss sweet potatoes with olive oil, salt, and pepper. Roast for 20–25 minutes, flipping halfway.
  2. Cook the beef: In a skillet over medium-high heat, brown ground beef for 6–8 minutes. Drain excess fat if needed.
  3. Season the beef: Add garlic, smoked paprika, chili powder, salt, and pepper. Stir, then add hot honey and cook for 2 minutes until coated and slightly thickened.
  4. Fry the eggs in a separate pan to your preference (sunny-side up recommended).
  5. Assemble bowls: Divide rice into bowls. Top with beef, roasted sweet potatoes, avocado, and egg.
  6. Finish: Add cheese, cilantro, sesame seeds, and drizzle extra hot honey or hot sauce. Serve immediately.
