- 2 cloves garlic, minced
- 1/4 cup hot honey (or honey + chili flakes)
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili powder (optional)

For the Sweet Potatoes:
- 1 medium sweet potato, peeled and diced
- 1 tablespoon olive oil
- Salt and pepper
For the Bowls:
- 1 cup cooked rice (white, brown, or cauliflower rice)
- 2 large eggs
- 1 avocado, sliced
- 1/4 cup crumbled queso fresco or feta
- Fresh cilantro, chopped
- Sesame seeds (optional)
- Extra hot honey or hot sauce
Instructions
- Preheat oven to 425°F (220°C). Toss sweet potatoes with olive oil, salt, and pepper. Roast for 20–25 minutes, flipping halfway.
- Cook the beef: In a skillet over medium-high heat, brown ground beef for 6–8 minutes. Drain excess fat if needed.
- Season the beef: Add garlic, smoked paprika, chili powder, salt, and pepper. Stir, then add hot honey and cook for 2 minutes until coated and slightly thickened.
- Fry the eggs in a separate pan to your preference (sunny-side up recommended).
- Assemble bowls: Divide rice into bowls. Top with beef, roasted sweet potatoes, avocado, and egg.
- Finish: Add cheese, cilantro, sesame seeds, and drizzle extra hot honey or hot sauce. Serve immediately.
