Description

Japanese-Style Risotto:

  • 3 tbsp olive oil (divided)
  • 10.5 oz shiitake mushrooms, torn
  • 1 tbsp low sodium soy sauce
  • 1 small yellow onion, diced
  • 1 celery stalk, diced
  • 1 garlic clove, minced
  • 1 cup sushi rice or Arborio rice
  • ¼ cup dry white wine (or sake)
  • 5 cups hot chicken broth
  • 1 tbsp white miso paste
  • Black pepper, for serving
  • Chives, chopped (for garnish)
  • Sesame seeds (for garnish)

Seared Salmon:

  • 5 tbsp low sodium soy sauce
  • 1 tbsp dry white wine
  • 1 tsp brown sugar
  • 4 skinless salmon fillets
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter

Instructions

  1. Marinate the salmon:
    In a shallow dish, mix soy sauce, white wine, and brown sugar. Add salmon and coat both sides. Set aside.
  2. Prepare vegetables:
    Tear shiitakes, dice onion and celery, and mince garlic.
  3. Cook mushrooms:
    Heat 1 tbsp olive oil over high heat. Add mushrooms and cook until moisture releases. Add another tbsp oil and brown. Stir in soy sauce and cook 1 minute. Remove and set aside.
  4. Build the base:
    Reduce heat to medium-low. Add remaining oil, then onion, celery, and garlic. Cook 2 minutes until fragrant.
  5. Toast rice:
    Add rice and cook for 1 minute. Pour in white wine and simmer 2 minutes, scraping the pan.
  6. Cook risotto:
    Add 2 ladles of hot broth at a time, stirring frequently. Let absorb before adding more. Continue for about 15 minutes until rice is almost tender.
  7. Finish risotto:
    Stir in mushrooms. Dissolve miso in a little hot broth and add. Simmer 5 more minutes until creamy.
  8. Sear salmon:
    Heat oil and butter in a skillet over medium-high heat. Cook salmon 4 minutes per side until golden and cooked through.
  9. Serve:
    Plate risotto, top with salmon, and garnish with black pepper, chives, and sesame seeds.

Notes

  • Keep broth warm for smoother risotto cooking.
  • Stir regularly but not constantly for best texture.
  • Dissolve miso before adding to avoid clumps.
  • Don’t flip salmon too early—let a golden crust form first.
  • Add extra broth if risotto becomes too thick before serving.
