- 4 boneless, skinless chicken breast halves
- 3 tablespoons soy sauce (or coconut aminos)
- 2 tablespoons honey
- 1 tablespoon vegetable oil
- Juice of 1 lime
- 1 teaspoon minced garlic
- 1 teaspoon fresh cilantro, finely chopped
- 2 tablespoons red bell pepper, finely chopped
- Optional: pinch of crushed red pepper or minced jalapeño
Instructions
- Prepare the marinade:
In a medium bowl, whisk together soy sauce, honey, vegetable oil, lime juice, garlic, cilantro, and red bell pepper until well combined. - Marinate the chicken:
Place chicken in a zip-top bag or dish and pour marinade over it. Coat well and refrigerate for 30 minutes to 2 hours. - Preheat the grill:
Heat grill to high and lightly oil grates to prevent sticking. - Grill the chicken:
Remove chicken from marinade and discard excess. Grill for 6–8 minutes per side until internal temperature reaches 165°F (75°C). - Rest and serve:
Let chicken rest for 5 minutes before serving. Optionally broil for 2 minutes for extra char.
