Description

Juicy Key West Grilled Chicken marinated in a sweet and tangy lime-honey sauce, grilled to smoky perfection with fresh herbs and bold tropical flavor.


Ingredients

  • 4 boneless, skinless chicken breast halves
  • 3 tablespoons soy sauce (or coconut aminos)
  • 2 tablespoons honey
  • 1 tablespoon vegetable oil
  • Juice of 1 lime
  • 1 teaspoon minced garlic
  • 1 teaspoon fresh cilantro, finely chopped
  • 2 tablespoons red bell pepper, finely chopped
  • Optional: pinch of crushed red pepper or minced jalapeño

Instructions

  1. Prepare the marinade:
    In a medium bowl, whisk together soy sauce, honey, vegetable oil, lime juice, garlic, cilantro, and red bell pepper until well combined.
  2. Marinate the chicken:
    Place chicken in a zip-top bag or dish and pour marinade over it. Coat well and refrigerate for 30 minutes to 2 hours.
  3. Preheat the grill:
    Heat grill to high and lightly oil grates to prevent sticking.
  4. Grill the chicken:
    Remove chicken from marinade and discard excess. Grill for 6–8 minutes per side until internal temperature reaches 165°F (75°C).
  5. Rest and serve:
    Let chicken rest for 5 minutes before serving. Optionally broil for 2 minutes for extra char.
