Description

This Korean Beef Bowl is a quick and flavorful dinner packed with savory ground beef, fresh veggies, and a creamy spicy sauce—all ready in under 30 minutes.

Korean Beef

  • 2 tbsp sesame oil
  • 1.5 lbs ground beef
  • 1/2 medium red onion, finely diced
  • 1/4 cup soy sauce (or tamari/coconut aminos)
  • 1 tbsp gochujang
  • 4 cloves garlic
  • 1 (2-inch) piece ginger
  • 2 tbsp honey (or 4 medjool dates)

Spicy Sauce

  • 1/3 cup mayonnaise
  • 2 tsp gochujang
  • 2 tsp lime juice

Cabbage Slaw

  • 2 cups shredded red cabbage
  • 2 tsp lime juice
  • 1/2 tbsp sesame oil
  • 2 tsp white sesame seeds

Bowl Add-Ins

  • 1 carrot, cut into matchsticks
  • 2 cups cooked rice (white, brown, or cauliflower)
  • 1 avocado, sliced
  • 2 fried eggs
  • 2 tbsp sesame seeds
  • 1/4 cup chopped scallions
  • 1/2 cup kimchi (optional)

Instructions

  1. Make the sauce:
    Blend soy sauce, gochujang, garlic, ginger, and honey until smooth.
  2. Cook the beef:
    Heat sesame oil in a skillet over medium-high heat. Add onion and cook for 2 minutes. Add ground beef, breaking it apart, and cook until browned (about 5 minutes).
  3. Add sauce & caramelize:
    Pour in the sauce, increase heat, and cook for 6–8 minutes, stirring occasionally until the beef is caramelized.
  4. Prepare spicy sauce:
    Blend mayonnaise, gochujang, and lime juice until creamy.
  5. Make cabbage slaw:
    Toss cabbage with sesame oil, lime juice, and sesame seeds.
  6. Assemble bowls:
    Divide rice into bowls, top with beef, cabbage, carrots, and avocado. Add a fried egg, then garnish with scallions and sesame seeds. Drizzle with spicy sauce and add kimchi if desired.
