  • 2 chicken breasts (cut into 4 thin cutlets)
  • 1 tsp lemon pepper seasoning
  • 1/2 tsp garlic powder
  • Salt (if needed)
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic (minced)
  • 1/2 cup chicken broth
  • 2 tbsp fresh lemon juice
  • 1 cup heavy cream
  • 1 package (16 oz) shelf-stable potato gnocchi
  • 1/2 cup freshly grated parmesan cheese
  • 2 cups fresh spinach

Instructions

  1. Slice chicken breasts lengthwise into thinner cutlets. Season with lemon pepper, garlic powder, and salt if needed.
  2. Heat olive oil and butter in a large skillet over medium-high heat. Sear chicken for 5–6 minutes per side until golden and cooked through. Remove and set aside.
  3. Reduce heat to medium. Add minced garlic and cook for about 30 seconds until fragrant.
  4. Pour in chicken broth and lemon juice. Scrape up browned bits from the pan for extra flavor.
  5. Stir in heavy cream and add uncooked gnocchi. Mix well so gnocchi is submerged. Simmer for 5–7 minutes, stirring occasionally, until gnocchi is tender and sauce thickens.
  6. Remove from heat. Stir in parmesan cheese and spinach until spinach wilts.
  7. Return chicken to the skillet, spoon sauce over top, and season with salt and pepper if needed. Serve immediately.

Notes

  • Do not pre-cook the gnocchi—it cooks directly in the sauce and helps thicken it.
  • If the sauce becomes too thick, add a splash of chicken broth.
  • Fresh lemon juice gives the best flavor—highly recommended.
  • Sauce will thicken more as it cools, so don’t over-reduce.
