- 12 oz spaghetti (or pasta of choice)
- 2 tablespoons olive oil
- 3 tablespoons butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 tablespoon lemon zest
- 2 tablespoons fresh lemon juice
- ¾ cup grated parmesan cheese
- ¼ cup chopped fresh parsley
- Salt, to taste
- Black pepper, to taste
- ½ cup reserved pasta water
Instructions
- Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve ½ cup of pasta water, then drain.
- In a large skillet, heat olive oil and butter over medium heat until melted.
- Add minced garlic and sauté for about 1 minute until fragrant (do not brown).
- Pour in the heavy cream and stir gently. Let it simmer for 2–3 minutes.
- Add lemon zest and lemon juice, stirring to combine.
- Stir in parmesan cheese and allow it to melt into the sauce.
- Add the cooked pasta to the skillet and toss to coat evenly.
- Pour in reserved pasta water a little at a time until the sauce reaches your desired consistency.
- Season with salt and black pepper.
- Finish with fresh parsley and extra parmesan if desired. Serve immediately.
Notes
Use freshly grated parmesan for the smoothest sauce—pre-shredded cheese can make it grainy.
If the sauce thickens too much, add a splash of pasta water to loosen it.
For extra protein, add grilled chicken or shrimp.
