- 3 cups white beans, cooked (rinsed and well-drained)
- ½ cup chopped parsley (packed)
- ⅓ cup chopped chives (packed)
- 2 garlic cloves
- ¼ cup extra virgin olive oil
- Juice of ½ lemon
- 1–2 teaspoons lemon zest
- 1 teaspoon dried thyme
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 teaspoon onion powder (optional)
- 2 teaspoons fresh rosemary (optional)
- Handful of roasted walnuts (optional)
Instructions
- Add white beans, parsley, chives, garlic, olive oil, lemon juice, lemon zest, thyme, salt, pepper, and optional seasonings to a food processor or blender.
- Blend for 1–2 minutes, scraping down the sides as needed.
- For a chunkier dip, blend for about 30 seconds. For a smoother texture, blend longer.
- Add roasted walnuts (if using) and pulse a few times until just combined.
- Taste and adjust seasoning—add more lemon juice for brightness, salt for flavor, or garlic for depth.
- Serve immediately or refrigerate for 1–2 hours to thicken before serving.

- Use canned beans for convenience—just rinse well.
- Adjust lemon and garlic to your taste preference.
- Add a splash of water or olive oil if the dip is too thick.
- Store in an airtight container in the fridge for up to 5 days.
