Description

This Lemon & Herb White Bean Dip is creamy, zesty, and packed with fresh herbs. A quick and healthy appetizer perfect for dipping, spreading, or entertaining.


Ingredients

  • 3 cups white beans, cooked (rinsed and well-drained)
  • ½ cup chopped parsley (packed)
  • ⅓ cup chopped chives (packed)
  • 2 garlic cloves
  • ¼ cup extra virgin olive oil
  • Juice of ½ lemon
  • 12 teaspoons lemon zest
  • 1 teaspoon dried thyme
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon onion powder (optional)
  • 2 teaspoons fresh rosemary (optional)
  • Handful of roasted walnuts (optional)

Instructions

  1. Add white beans, parsley, chives, garlic, olive oil, lemon juice, lemon zest, thyme, salt, pepper, and optional seasonings to a food processor or blender.
  2. Blend for 1–2 minutes, scraping down the sides as needed.
  3. For a chunkier dip, blend for about 30 seconds. For a smoother texture, blend longer.
  4. Add roasted walnuts (if using) and pulse a few times until just combined.
  5. Taste and adjust seasoning—add more lemon juice for brightness, salt for flavor, or garlic for depth.
  6. Serve immediately or refrigerate for 1–2 hours to thicken before serving.

  • Use canned beans for convenience—just rinse well.
  • Adjust lemon and garlic to your taste preference.
  • Add a splash of water or olive oil if the dip is too thick.
