- 1 pound rotini pasta
- 1 cup Italian dressing
- Juice of 2 lemons
- 1 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 teaspoon garlic powder
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon onion powder
Instructions
- Bring a large pot of salted water to a boil and cook the rotini pasta according to package instructions, about 10 to 11 minutes.
- Drain the pasta and rinse under cold water until cooled. Drain well.
- In a large bowl, whisk together the Italian dressing, lemon juice, Parmesan cheese, parsley, garlic powder, salt, black pepper, and onion powder.
- Add the cooled pasta to the bowl and toss until evenly coated.
- Serve immediately or chill for 1 to 2 hours for even better flavor. Stir before serving.
Notes
Chilling the pasta salad allows the flavors to develop and blend together beautifully.
Add chopped cucumber or sweet bell peppers for extra crunch and freshness.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
If the pasta absorbs too much dressing after chilling, add a splash of Italian dressing or fresh lemon juice before serving.
