Description

This Low-Carb Bacon Cheeseburger Casserole is the ultimate comfort food without the carbs. Packed with seasoned ground beef, crispy bacon, and melty cheese, it delivers all the classic cheeseburger flavors in a warm, satisfying bake—perfect for busy weeknights or meal prep.

Ingredients

Scale
  • 1 lb ground beef
  • 6 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 4 large eggs
  • 1/2 cup heavy cream
  • 1/4 cup cream cheese, softened
  • 1/4 cup diced onion
  • 2 cloves garlic, minced
  • 1 tsp mustard
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1/4 cup chopped green onions (for garnish)
  • 1/2 cup diced tomatoes (optional topping)

Instructions

  1. Preheat your oven to 375°F and lightly grease a baking dish.
  2. In a skillet over medium heat, cook the bacon until crispy. Remove, crumble, and set aside.
  3. In the same skillet, cook ground beef with diced onion and garlic until browned. Drain excess grease.
  4. Stir in mustard, paprika, salt, and pepper. Mix well and remove from heat.
  5. In a bowl, whisk together eggs, heavy cream, and cream cheese until smooth.
  6. Spread the beef mixture evenly into the baking dish.
  7. Pour the egg mixture over the beef layer.
  8. Top with shredded cheddar, mozzarella, and crumbled bacon.
  9. Bake for 25–30 minutes, or until set and golden on top.
  10. Let cool slightly, then garnish with green onions and tomatoes before serving.

Notes

Want extra flavor? Add a splash of pickle juice or chopped pickles for that true cheeseburger vibe.

You can swap ground beef for ground turkey for a lighter option.

Let the casserole rest for 5–10 minutes before slicing—it helps everything hold together beautifully.
