This Low Carb Unstuffed Cabbage Casserole Recipe is a cozy one-pan dinner packed with seasoned ground beef, tender cabbage, tomatoes, and melty cheese. It’s keto-friendly, family-approved, and ready in just 30 minutes for an easy weeknight comfort meal.


Ingredients

  • 3 tablespoons oil
  • 1 lb ground beef
  • 1 sweet onion, chopped
  • 1 orange bell pepper, seeded and chopped
  • 3 garlic cloves, chopped
  • 14 oz can fire roasted diced tomatoes
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • 1 small head green cabbage, cored and chopped
  • 2 cups shredded cheddar jack cheese

Instructions

  1. Heat oil in a large Dutch oven or deep skillet over medium-high heat. Add ground beef, onion, and bell pepper. Cook until the beef is browned and onions are softened.
  2. Stir in the garlic and cook for 1 minute until fragrant.
  3. Add the fire roasted tomatoes, smoked paprika, oregano, garlic powder, onion powder, salt, and pepper. Stir well.
  4. Top the mixture with chopped cabbage. Cover and cook for 15–20 minutes, or until the cabbage becomes tender.
  5. Sprinkle shredded cheese over the casserole. Cover again for a few minutes until the cheese melts.
  6. Serve warm and garnish with fresh parsley if desired.

Notes

Add 1/4 cup water if the cabbage does not release enough liquid while cooking.

For extra flavor, try doubling the seasonings or adding Worcestershire sauce.

Cauliflower rice makes a great low carb addition.

Ground turkey or chicken can be substituted for ground beef.

Leftovers taste even better the next day.
