- 3 tablespoons oil
- 1 lb ground beef
- 1 sweet onion, chopped
- 1 orange bell pepper, seeded and chopped
- 3 garlic cloves, chopped
- 14 oz can fire roasted diced tomatoes
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper, to taste
- 1 small head green cabbage, cored and chopped
- 2 cups shredded cheddar jack cheese
Instructions
- Heat oil in a large Dutch oven or deep skillet over medium-high heat. Add ground beef, onion, and bell pepper. Cook until the beef is browned and onions are softened.
- Stir in the garlic and cook for 1 minute until fragrant.
- Add the fire roasted tomatoes, smoked paprika, oregano, garlic powder, onion powder, salt, and pepper. Stir well.
- Top the mixture with chopped cabbage. Cover and cook for 15–20 minutes, or until the cabbage becomes tender.
- Sprinkle shredded cheese over the casserole. Cover again for a few minutes until the cheese melts.
- Serve warm and garnish with fresh parsley if desired.
Notes
Add 1/4 cup water if the cabbage does not release enough liquid while cooking.
For extra flavor, try doubling the seasonings or adding Worcestershire sauce.
Cauliflower rice makes a great low carb addition.
Ground turkey or chicken can be substituted for ground beef.
Leftovers taste even better the next day.
