- 1 red bell pepper, chopped

- 3 tablespoons red curry paste

- 2 teaspoons yellow curry powder
- ½ teaspoon ground cumin
- 2 cups ripe mango, divided
- 1 (13.5-ounce) can full-fat coconut milk
- 1¼ pounds boneless, skinless chicken (thighs or breasts), cut into 1-inch pieces
- Salt to taste (about 1 teaspoon)

- Lime zest and juice
- Fish sauce
- Kaffir lime leaves

Instructions
- Heat coconut oil in a large pot over medium heat. Add onion and bell pepper. Sauté for 7–9 minutes until softened.
- Stir in garlic and ginger; cook for 1 minute until fragrant.
- Add red curry paste, coriander, curry powder, cumin, and salt. Cook for 1–3 minutes, stirring constantly.
- Add 1 cup mango and stir for 1 minute. Pour in coconut milk and bring to a gentle boil.
- Reduce heat and simmer for 10–15 minutes.
- Carefully blend the sauce until smooth, then return it to the pot.
- Add chicken pieces, cover, and cook for 8–15 minutes until fully cooked.
- Stir in remaining mango and optional additions like cilantro and lime juice.
- Taste and adjust seasoning. Serve hot over rice.

- Chicken thighs stay juicier, but breasts work great too.
