For the Toasted Coconut Crust

  • 1½ cups graham cracker crumbs
  • ¼ cup unsweetened shredded coconut, finely chopped
  • 2 tbsp granulated sugar
  • 5 tbsp unsalted butter, melted
  • Pinch fine salt

For the Silky Mango Curd

  • 1¼ cups smooth mango purée
  • 6 large egg yolks
  • ½ cup granulated sugar
  • ¼ cup fresh lime juice
  • 6 tbsp unsalted butter, cold and cubed
  • 1 tsp lime zest
  • Pinch sea salt

Optional Toppings

  • Fresh mango cubes
  • Whipped cream
  • Fresh mint leaves

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Combine graham cracker crumbs, coconut, sugar, and salt in a bowl. Stir in melted butter until evenly coated.
  3. Press mixture firmly into a 9-inch tart pan. Bake for 10–12 minutes until golden brown. Cool completely.
  4. Blend mangoes until smooth, then strain through a fine-mesh sieve. Measure 1¼ cups purée.
  5. In a heavy saucepan, whisk together mango purée, egg yolks, sugar, and lime juice.
  6. Cook over medium-low heat, whisking constantly for 8–10 minutes until thick enough to coat the back of a spoon.
  7. Remove from heat. Stir in lime zest and salt.
  8. Whisk in cold butter a few cubes at a time until fully incorporated and glossy.
  9. Pour curd into the cooled crust and smooth the top.
  10. Press plastic wrap directly onto the surface.
  11. Refrigerate for at least 4 hours or overnight.
  12. Garnish with mango, whipped cream, or mint before serving.

Notes

Straining the mango purée creates an ultra-smooth curd.

Do not allow the curd to boil or the eggs may curdle.

Overnight chilling provides the best texture and flavor.

Use ripe mangoes for maximum sweetness and vibrant color.

Add toppings just before serving for the freshest appearance.
