  • 3 large apples (about 1 pound), chopped

  • ¼ cup olive oil (or aquafaba)
  • ¼ cup maple syrup
  • 3 tbsp stone ground Dijon mustard
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp thyme

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Core and chop apples into ½-inch cubes.
  3. Slice carrots on the bias into ¼-inch thick pieces.
  4. Dice onion and finely chop garlic.
  5. In a large bowl, whisk olive oil, maple syrup, Dijon mustard, salt, pepper, and thyme.
  6. Add carrots, apples, onion, and garlic. Toss until evenly coated.
  7. Spread mixture on a baking sheet in a single layer.
  8. Roast for 15 minutes until lightly browned on one side.
  9. Flip and roast another 10–15 minutes until carrots are tender and glaze is caramelized.
