- 3 tbsp stone ground Dijon mustard
- ½ tsp salt

- 1 tsp thyme
Instructions
- Preheat oven to 425°F (220°C).
- Core and chop apples into ½-inch cubes.
- Slice carrots on the bias into ¼-inch thick pieces.
- Dice onion and finely chop garlic.
- In a large bowl, whisk olive oil, maple syrup, Dijon mustard, salt, pepper, and thyme.
- Add carrots, apples, onion, and garlic. Toss until evenly coated.
- Spread mixture on a baking sheet in a single layer.
- Roast for 15 minutes until lightly browned on one side.
- Flip and roast another 10–15 minutes until carrots are tender and glaze is caramelized.
