Marinated Tomatoes are a fresh and flavorful Mediterranean-inspired side dish made with juicy ripe tomatoes, olive oil, vinegar, garlic, red onion, and fresh herbs. Perfect for summer dinners, BBQs, salads, or served with crusty bread.

- 1.5 pounds ripe tomatoes
- 6 tablespoons extra virgin olive oil
- 2 tablespoons red grape vinegar
- ⅓ cup red onion, finely chopped
- 1 garlic clove, minced
- 2 teaspoons fresh basil, chopped
- 2 teaspoons fresh parsley, finely chopped
- 1 teaspoon fresh dill, finely chopped
- Salt and freshly ground black pepper, to taste
Instructions
- Rinse and pat dry the tomatoes, then slice them into ⅓-inch thick slices. Arrange the slices in a shallow serving dish.
- In a medium bowl, whisk together olive oil, vinegar, red onion, garlic, basil, parsley, dill, salt, and pepper.
- Pour the marinade evenly over the tomatoes.
- Cover and refrigerate for at least 2 hours, flipping once halfway through for maximum flavor.
- Serve chilled as a salad, side dish, or topping for grilled meats and bread.
Notes
Use fresh, ripe tomatoes for the best flavor. Beefsteak, heirloom, roma, or cherry tomatoes all work beautifully.
Fresh herbs are highly recommended for a brighter taste. If using dried herbs, use one-third of the amount.
Marinate for at least 2 hours to allow the flavors to develop fully.
Save leftover marinade for pasta salads, soups, or roasted vegetables.
Store leftovers in the refrigerator for up to 3 days.
