- 4 white fish fillets (cod, snapper, or halibut)
- 2 tablespoons olive oil
- 1 lemon, zested and juiced
- 3 garlic cloves, minced
- 1 onion, sliced
- 1 bell pepper, sliced
- 1 zucchini, sliced
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh parsley, chopped
- 1 tablespoon fresh dill, chopped
- 1 teaspoon dried oregano
- Salt, to taste
- Black pepper, to taste
- Lemon wedges, for serving
Instructions
- Preheat oven to 400°F (200°C).
- Lightly grease a baking dish with olive oil.
- Pat fish fillets dry and season with salt, black pepper, and oregano.
- Heat olive oil in a skillet over medium heat. Sauté onions for 5 minutes until soft.
- Add bell pepper and zucchini and cook until slightly tender. Stir in garlic and cook for 1 minute.
- Spread sautéed vegetables into the baking dish. Place fish fillets on top.
- Add cherry tomatoes, parsley, and dill over the fish. Drizzle with lemon juice and sprinkle lemon zest on top.
- Cover with foil and bake for 20 minutes.
- Remove foil and bake another 5–10 minutes until fish flakes easily with a fork.
- Garnish with extra herbs and lemon wedges before serving.
Notes
Cod, snapper, halibut, or sea bass all work beautifully in this recipe.
Avoid overcooking the fish to keep it tender and flaky.
Serve with crusty bread, couscous, or a fresh Mediterranean salad.
Add olives or feta cheese for extra Mediterranean flavor.
