Description

This easy Mediterranean Broccoli Bake combines tender broccoli, sweet red peppers, Kalamata olives, feta, Parmesan, olive oil, and fresh dill. Baked until warm and lightly golden, it’s a colorful, flavor-packed vegetable side dish that’s perfect for weeknight dinners, holidays, or entertaining.

  • 4 cups broccoli florets (about 1 medium head)
  • ½ cup red peppers, chopped
  • ½ cup Kalamata olives, pitted and halved
  • 3 tablespoons olive oil
  • ¾ cup feta cheese, crumbled
  • ½ cup Parmesan cheese
  • 2 teaspoons fresh dill, divided

Instructions

  1. Wash the broccoli thoroughly. Cut the crowns away from the large stems, then separate them into smaller, evenly sized florets. Place the florets in a steamer basket.
  2. Add about 1 inch of water to a pot and bring to a boil over medium heat. Place the steamer basket inside the pot, cover, and steam the broccoli for about 5 minutes, until bright green and just beginning to become tender.
  3. Preheat the oven to 375°F. Carefully remove the broccoli from the steamer basket and transfer it to a baking dish.
  4. Scatter the chopped red peppers and Kalamata olives over the broccoli. Drizzle evenly with olive oil.
  5. Top with crumbled feta, Parmesan, and 1 teaspoon of fresh dill.
  6. Bake for about 15 minutes, or until everything is hot and the cheeses are beginning to turn lightly golden.
  7. Remove from the oven and sprinkle with the remaining 1 teaspoon fresh dill. Serve immediately.

Notes

  • Avoid over-steaming the broccoli because it will continue cooking in the oven.
  • Let excess water drain from the steamed broccoli before adding it to the baking dish.
  • Feta, Parmesan, and Kalamata olives are naturally salty, so additional salt may not be necessary.
