  • 2 tablespoons olive oil
  • 1 zucchini, sliced
  • 1 yellow bell pepper, chopped
  • 1 red bell pepper, sliced
  • 1 cup cherry tomatoes, halved
  • ½ red onion, thinly sliced
  • ½ cup Kalamata olives
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon paprika
  • Salt and pepper, to taste
  • Juice of ½ lemon
  • ¼ cup crumbled feta cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
  2. Add chicken pieces, season with salt, pepper, and paprika, and cook until golden and cooked through (about 6–8 minutes). Remove and set aside.
  3. In the same skillet, add remaining olive oil. Sauté garlic and red onion for 2 minutes until fragrant.
  4. Add zucchini, bell peppers, and cherry tomatoes. Cook for 5–6 minutes until slightly tender but still crisp.
  5. Stir in oregano, basil, and olives.
  6. Return cooked chicken to the skillet and toss everything together.
  7. Squeeze fresh lemon juice over the dish and mix well.
  8. Remove from heat and sprinkle with crumbled feta and fresh parsley before serving.
