Description

Mediterranean Chicken Tacos are packed with juicy marinated chicken, fresh vegetables, tangy Greek yogurt sauce, and crumbled feta, all wrapped in warm tortillas for an easy, flavor-filled dinner.


Ingredients

  • 1 lb boneless, skinless chicken breasts

  • 2 tablespoons olive oil

  • 3 cloves garlic, minced

  • 1 teaspoon dried oregano

  • 1 teaspoon ground cumin

  • Salt and black pepper, to taste

  • 1 cup plain Greek yogurt

  • Juice of 1 lemon

  • 1 cup diced tomatoes

  • 1 cup diced cucumber

  • ½ cup finely chopped red onion

  • ½ cup kalamata olives, pitted and sliced

  • ½ cup crumbled feta cheese

  • 8 small corn tortillas or soft taco shells

  • Fresh parsley, chopped, for garnish


Instructions

  1. In a bowl, combine olive oil, garlic, oregano, cumin, salt, and pepper. Add chicken and coat evenly. Marinate for 30 minutes.

  2. Heat a grill or skillet over medium-high heat. Cook chicken 6–7 minutes per side until fully cooked. Rest for 5 minutes, then slice.

  3. In a small bowl, mix Greek yogurt with lemon juice until smooth.

  4. In another bowl, combine tomatoes, cucumber, red onion, olives, and feta.

  5. Warm tortillas briefly in a pan or over a grill.

  6. Assemble tacos with sliced chicken, yogurt sauce, and Mediterranean topping.

  7. Garnish with fresh parsley and serve immediately.

Notes

Add sliced avocado or fresh dill for extra flavor.

For heat, mix red pepper flakes into the marinade.

Serve with hummus or tzatziki for a complete Mediterranean-style meal.
