Moroccan Stewed White Beans- Loubia is a cozy, flavorful bean stew made with creamy cannellini beans simmered in a rich tomato sauce with garlic, onion, cumin, paprika, turmeric, parsley, and cilantro. - 1 medium onion, finely chopped
- 4–5 garlic cloves, crushed
- 2 tablespoons tomato paste
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon ground cumin
- 1/4 teaspoon paprika
- 1/4 teaspoon ground turmeric
- 1 (14.5-ounce/400 g) can diced tomatoes, with juices
- 1/2 cup water
- 2 (14.5-ounce/400 g each) cans cannellini beans, drained and rinsed
- Warm pita or flatbread, for serving (optional)
Instructions
- Sauté the onion: Heat the olive oil in a medium saucepan over medium-high heat. Add the chopped onion and sauté for 3–4 minutes, or until softened and fragrant.
- Add the garlic: Stir in the crushed garlic and cook for about 1 minute, stirring frequently to prevent it from burning.
- Build the flavor base: Add the tomato paste and cook for 30 seconds. Stir in the parsley, cilantro, salt, black pepper, cumin, paprika, and turmeric until well combined.
- Simmer the tomato sauce: Add the diced tomatoes with their juices and 1/2 cup water. Bring to a boil, then reduce the heat to low. Cover and simmer for 10 minutes.
- Add the beans: Stir in the drained and rinsed cannellini beans gently so they don’t break apart.
- Finish the stew: Simmer uncovered for another 10 minutes, allowing the beans to warm through and the tomato sauce to thicken.
- Serve: Remove from the heat and serve warm or at room temperature. Garnish with extra parsley or cilantro if desired and serve with warm pita or flatbread.
Notes
- Stir the beans gently after adding them to keep them from breaking apart.
- If the loubia becomes too thick, add a splash of water until it reaches your preferred consistency.
- For a thicker stew, simmer it uncovered for a few extra minutes.
- For extra heat, add a pinch of cayenne pepper or red pepper flakes.
- Taste before serving and adjust the salt and spices as needed.
- Leftovers can be cooled and stored in an airtight container in the refrigerator.
