  • 1 medium onion, finely chopped
  • 45 garlic cloves, crushed
  • 2 tablespoons tomato paste
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon paprika
  • 1/4 teaspoon ground turmeric
  • 1 (14.5-ounce/400 g) can diced tomatoes, with juices
  • 1/2 cup water
  • 2 (14.5-ounce/400 g each) cans cannellini beans, drained and rinsed
  • Warm pita or flatbread, for serving (optional)

Instructions

  1. Sauté the onion: Heat the olive oil in a medium saucepan over medium-high heat. Add the chopped onion and sauté for 3–4 minutes, or until softened and fragrant.
  2. Add the garlic: Stir in the crushed garlic and cook for about 1 minute, stirring frequently to prevent it from burning.
  3. Build the flavor base: Add the tomato paste and cook for 30 seconds. Stir in the parsley, cilantro, salt, black pepper, cumin, paprika, and turmeric until well combined.
  4. Simmer the tomato sauce: Add the diced tomatoes with their juices and 1/2 cup water. Bring to a boil, then reduce the heat to low. Cover and simmer for 10 minutes.
  5. Add the beans: Stir in the drained and rinsed cannellini beans gently so they don’t break apart.
  6. Finish the stew: Simmer uncovered for another 10 minutes, allowing the beans to warm through and the tomato sauce to thicken.
  7. Serve: Remove from the heat and serve warm or at room temperature. Garnish with extra parsley or cilantro if desired and serve with warm pita or flatbread.

Notes

  • Stir the beans gently after adding them to keep them from breaking apart.
  • If the loubia becomes too thick, add a splash of water until it reaches your preferred consistency.
  • For a thicker stew, simmer it uncovered for a few extra minutes.
  • For extra heat, add a pinch of cayenne pepper or red pepper flakes.
