Chicken & Mushrooms:

  • 10 oz mushrooms (button or baby bella), sliced
  • 2 tablespoons salted butter
  • 2 large boneless skinless chicken breasts
  • Salt and pepper, to taste
  • ½ cup all-purpose flour
  • 34 tablespoons olive oil

Sauce:

  • 2 ½ cups beef broth
  • 1 chicken bouillon cube (or 1 tsp Better Than Bouillon)
  • 1 teaspoon soy sauce (or Worcestershire sauce)
  • 1 teaspoon onion powder
  • ½ teaspoon mustard powder
  • ½ teaspoon dried thyme
  • ½ cup dry white wine
  • 3 cloves garlic, minced
  • 3 tablespoons cornstarch
  • 3 tablespoons cold water
  • ⅓ cup heavy cream

Instructions

  1. Prep the Sauce Base:
    In a bowl, mix beef broth, bouillon, soy sauce, onion powder, mustard powder, and thyme. Set aside.
  2. Make Slurry:
    Combine cornstarch with cold water, shake well, and set aside.
  3. Prepare Chicken & Mushrooms:
    Slice mushrooms and cut chicken into thin pieces (about ½ inch thick). Pound lightly if needed.
  4. Cook Mushrooms:
    Melt butter over medium-high heat. Add mushrooms and cook undisturbed for 3–4 minutes per side until golden. Remove and set aside.
  5. Sear Chicken:
    Season chicken with salt and pepper, dredge in flour, and shake off excess.
    Heat olive oil and sear chicken for 4–5 minutes per side until golden. Remove and set aside.
  6. Deglaze Pan:
    Remove excess oil but keep the browned bits. Add wine and garlic, simmer until reduced by half (about 4 minutes).
  7. Make Sauce:
    Add broth mixture and simmer for 10 minutes. Stir in cornstarch slurry until thickened.
  8. Finish:
    Reduce heat, stir in cream, then add mushrooms and chicken back. Spoon sauce over top, cover partially, and heat for 5 minutes.
  9. Serve:
    Serve hot over mashed potatoes, noodles, or rice.

Notes

  • Dry mushrooms well before cooking for better browning.
  • Don’t overcrowd the pan—this helps achieve a perfect sear.
  • Substitute wine with extra broth if needed.
