Creamy, comforting One Pot Marry Me Chicken Orzo made in just 30 minutes. This rich, flavor-packed dish with sun-dried tomatoes, parmesan, and tender chicken is the perfect easy weeknight dinner.

Ingredients

Scale
  • Olive oil spray
  • 455g (1 lb) boneless, skinless chicken breast, chopped
  • Salt and pepper, to taste
  • 3 cloves garlic, finely chopped
  • 1 small onion, finely chopped
  • 1 ½ teaspoon paprika
  • ½ teaspoon oregano
  • ½ teaspoon thyme
  • ¼ teaspoon chili flakes
  • 200g (7 oz) dry orzo
  • 600ml (2.5 cups) chicken stock (plus extra if needed)
  • 80g (2.8 oz) sun-dried tomatoes, drained
  • 60g (2.1 oz) reduced fat cream cheese
  • 120ml (½ cup) half and half (or light cream)
  • 50g (1 ¾ oz) Parmesan, grated
  • Handful of fresh basil, chopped

Instructions

  1. Heat a large deep pan over medium-high heat and spray with olive oil.
  2. Add chicken, season with salt and pepper, and cook until lightly golden. Remove and set aside.
  3. In the same pan, sauté onion and garlic until soft and fragrant.
  4. Add paprika, oregano, thyme, and chili flakes. Stir for 30 seconds.
  5. Stir in the orzo and cook for 1 minute until slightly translucent.
  6. Pour in chicken stock, bring to a boil, then reduce heat and simmer for 9–10 minutes, stirring occasionally.
  7. Add chicken back to the pan with sun-dried tomatoes, cream cheese, and half and half. Stir until creamy and fully combined.
  8. Add Parmesan and fresh basil, stirring until melted.
  9. Season to taste and serve warm.

Notes

  • Add extra stock if the orzo becomes too thick while cooking.
  • Swap chicken breast for thighs for extra juiciness.
  • Stir frequently to prevent sticking.
  • Great for leftovers—just add a splash of liquid when reheating.
