Creamy, comforting One Pot Marry Me Chicken Orzo made in just 30 minutes. This rich, flavor-packed dish with sun-dried tomatoes, parmesan, and tender chicken is the perfect easy weeknight dinner.

- 455g (1 lb) boneless, skinless chicken breast, chopped
- Salt and pepper, to taste
- 3 cloves garlic, finely chopped
- 1 small onion, finely chopped
- 1 ½ teaspoon paprika
- ½ teaspoon oregano
- ½ teaspoon thyme
- ¼ teaspoon chili flakes
- 200g (7 oz) dry orzo
- 600ml (2.5 cups) chicken stock (plus extra if needed)
- 80g (2.8 oz) sun-dried tomatoes, drained
- 60g (2.1 oz) reduced fat cream cheese
- 120ml (½ cup) half and half (or light cream)
- 50g (1 ¾ oz) Parmesan, grated
- Handful of fresh basil, chopped
Instructions
- Heat a large deep pan over medium-high heat and spray with olive oil.
- Add chicken, season with salt and pepper, and cook until lightly golden. Remove and set aside.
- In the same pan, sauté onion and garlic until soft and fragrant.
- Add paprika, oregano, thyme, and chili flakes. Stir for 30 seconds.
- Stir in the orzo and cook for 1 minute until slightly translucent.
- Pour in chicken stock, bring to a boil, then reduce heat and simmer for 9–10 minutes, stirring occasionally.
- Add chicken back to the pan with sun-dried tomatoes, cream cheese, and half and half. Stir until creamy and fully combined.
- Add Parmesan and fresh basil, stirring until melted.
- Season to taste and serve warm.
Notes
- Add extra stock if the orzo becomes too thick while cooking.
- Swap chicken breast for thighs for extra juiciness.
- Stir frequently to prevent sticking.
- Great for leftovers—just add a splash of liquid when reheating.
