Ingredients

  • 2 tablespoons Dijon mustard
  • 1 tablespoon lemon juice
  • 2 tablespoons white wine
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon fresh basil, finely chopped
  • 1/2 teaspoon red pepper flakes
  • 1 pound halibut fillet (skin on)

Instructions

  1. Preheat grill to medium heat.
  2. In a bowl, whisk together orange marmalade, Dijon mustard, lemon juice, white wine, salt, pepper, basil, and red pepper flakes.
  3. Place halibut on the grill skin-side down. Spoon some glaze over the top.
  4. Close the lid and cook for about 10 minutes.
  5. Check doneness (145°F internal temperature or flakes easily with a fork).
  6. Spoon remaining glaze over the fish and cook briefly until glossy.
  7. Remove from grill and serve immediately.
