Description

Pasta Primavera is a fresh, colorful dish loaded with tender-crisp vegetables and tossed with perfectly cooked pasta in a light garlic sauce. It’s a quick, wholesome meal that feels both comforting and vibrant—perfect for busy weeknights or a relaxed dinner with family.

  • 12 oz penne pasta
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup broccoli florets
  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 1 red bell pepper, sliced
  • 1 cup cherry tomatoes, halved
  • ½ red onion, sliced
  • ½ cup grated Parmesan cheese
  • ¼ cup pasta water (reserved)
  • Salt and black pepper, to taste
  • 1 teaspoon Italian seasoning
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil and cook the penne pasta according to package instructions. Reserve ¼ cup of pasta water, then drain.
  2. Heat olive oil in a large skillet over medium heat. Add garlic and sauté for about 30 seconds until fragrant.
  3. Add broccoli, zucchini, squash, and bell pepper. Cook for 4–5 minutes until slightly tender but still crisp.
  4. Stir in cherry tomatoes and red onion, cooking for another 2–3 minutes.
  5. Add the cooked pasta to the skillet and toss everything together.
  6. Pour in the reserved pasta water and sprinkle in Italian seasoning. Mix well to coat.
  7. Remove from heat and stir in grated Parmesan cheese.
  8. Season with salt and black pepper to taste.
  9. Garnish with fresh parsley and serve warm.

Notes

You can swap vegetables based on what you have on hand—this dish is very flexible.

For extra protein, add grilled chicken or shrimp.

Use freshly grated Parmesan for the best flavor and texture.

Don’t overcook the veggies—they should stay vibrant and slightly crisp.
