- 4 ears of corn
- 2 peaches, sliced or diced
- ¼ cup red onion, thinly sliced
- ¼ cup cilantro, chopped
- 1 medium jalapeño, deseeded & thinly sliced
- 1–2 large avocados, diced
- 3 Tbsp lime juice
- 3 tsp honey
- Salt & black pepper, to taste
Instructions
- Cook the corn: Prepare the corn using your preferred method (boil, grill, or roast). Let it cool completely, then cut the kernels off the cob and add to a large bowl.
- Make the dressing: In a small bowl, whisk together lime juice and honey until fully combined. Add black pepper to taste.
- Assemble the salad: Add peaches, red onion, cilantro, and jalapeño to the corn. Pour the dressing over and gently toss to coat.
- Season: Add salt to taste and toss again lightly.
- Chill: Cover and refrigerate for 10–20 minutes to let flavors blend.
- Add avocado & serve: Gently fold in diced avocado just before serving or add on top of individual portions. Serve immediately.
Notes
- Add avocado last to prevent browning and mushiness.
- Adjust jalapeño seeds for preferred spice level.
- Grilled corn adds a delicious smoky flavor.
- Best enjoyed fresh, but can be stored for up to 1–2 days (without avocado).
