- 3 ripe peaches, sliced thinly
- 2 balls burrata cheese (about 4 oz each)
- 1 cup cherry tomatoes, halved (optional)
- ½ cup fresh basil leaves
- 2 cups arugula or mixed greens (optional)
- 2 tablespoons extra virgin olive oil
- 1–2 tablespoons balsamic glaze
- ¼ teaspoon sea salt (or to taste)
- ¼ teaspoon freshly ground black pepper
Instructions
- Wash and slice the peaches into thin wedges. Halve cherry tomatoes if using. Tear burrata into halves or quarters.
- Arrange arugula or mixed greens on a serving platter if desired.
- Place burrata evenly over the greens or plate.
- Add peach slices around and over the burrata. Scatter cherry tomatoes on top.
- Tuck fresh basil leaves throughout the salad.
- Drizzle olive oil and balsamic glaze over the salad.
- Sprinkle with sea salt and black pepper. Serve immediately.
