This Peach Burrata Summer Salad is a fresh, vibrant dish made with juicy peaches, creamy burrata, peppery greens, and a drizzle of balsamic glaze—perfect for warm days and effortless entertaining.


Ingredients

  • 3 ripe peaches, sliced thinly
  • 2 balls burrata cheese (about 4 oz each)
  • 1 cup cherry tomatoes, halved (optional)
  • ½ cup fresh basil leaves
  • 2 cups arugula or mixed greens (optional)
  • 2 tablespoons extra virgin olive oil
  • 12 tablespoons balsamic glaze
  • ¼ teaspoon sea salt (or to taste)
  • ¼ teaspoon freshly ground black pepper

Instructions

  1. Wash and slice the peaches into thin wedges. Halve cherry tomatoes if using. Tear burrata into halves or quarters.
  2. Arrange arugula or mixed greens on a serving platter if desired.
  3. Place burrata evenly over the greens or plate.
  4. Add peach slices around and over the burrata. Scatter cherry tomatoes on top.
  5. Tuck fresh basil leaves throughout the salad.
