- 2 medium ripe peaches, pitted
- 2 medium heirloom tomatoes
- ½ cup loosely packed fresh basil
- 2 tablespoons extra virgin olive oil
- 1–2 tablespoons balsamic reduction (optional)
- ½ teaspoon kosher salt (or to taste)
- ½ teaspoon ground pepper (or to taste)
Instructions
- Slice the mozzarella into quarters, then cut into ½-inch slices.
- Halve the peaches, remove pits, and slice into bite-sized pieces.
- Core and slice the tomatoes into similar-sized chunks.
- Tear or roughly chop the fresh basil leaves.
- In a large bowl, combine mozzarella, peaches, tomatoes, and basil.
- Drizzle with olive oil, then season with salt and pepper.
- Gently toss until everything is evenly coated.
- Drizzle with balsamic reduction if desired and serve immediately.

- Use ripe but firm peaches for the best texture.
- Add salt just before serving to prevent excess moisture.
- For extra flavor, try burrata instead of mozzarella.
