Description

For the Crust & Crumble:

  • 2 cups (250 g) all-purpose flour
  • 1 cup (200 g) granulated sugar
  • ½ cup (100 g) brown sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ cup (170 g) unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract

For the Peach Filling:

  • 3 cups (450 g) fresh peaches, peeled and diced
  • 2 tablespoons cornstarch
  • ¼ cup (50 g) sugar (adjust to taste)
  • 1 tablespoon lemon juice
  • ½ teaspoon cinnamon

Instructions

  1. Preheat oven to 350°F (180°C) and line a baking pan with parchment paper.
  2. In a large bowl, mix flour, granulated sugar, brown sugar, baking powder, and salt.
  3. Add melted butter, egg, and vanilla extract. Stir until a crumbly dough forms.
  4. Press two-thirds of the dough into the prepared pan to form the base.
  5. In another bowl, mix peaches, sugar, cornstarch, lemon juice, and cinnamon.
  6. Spread the peach filling evenly over the crust.
  7. Crumble the remaining dough over the top.
  8. Bake for 35–40 minutes until golden and bubbly.
  9. Let cool completely before slicing into bars.
