For the Crust & Crumble:
- 2 cups (250 g) all-purpose flour
- 1 cup (200 g) granulated sugar
- ½ cup (100 g) brown sugar
- 1 teaspoon baking powder
- ¼ teaspoon salt
- ¾ cup (170 g) unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
For the Peach Filling:
- 3 cups (450 g) fresh peaches, peeled and diced
- 2 tablespoons cornstarch
- ¼ cup (50 g) sugar (adjust to taste)
- 1 tablespoon lemon juice
- ½ teaspoon cinnamon
Instructions
- Preheat oven to 350°F (180°C) and line a baking pan with parchment paper.
- In a large bowl, mix flour, granulated sugar, brown sugar, baking powder, and salt.
- Add melted butter, egg, and vanilla extract. Stir until a crumbly dough forms.
- Press two-thirds of the dough into the prepared pan to form the base.
- In another bowl, mix peaches, sugar, cornstarch, lemon juice, and cinnamon.
- Spread the peach filling evenly over the crust.
- Crumble the remaining dough over the top.
- Bake for 35–40 minutes until golden and bubbly.
- Let cool completely before slicing into bars.

- Use ripe, fresh peaches for the best flavor.
- Allow bars to cool fully for clean slices.
- Store in an airtight container in the fridge for up to 5 days.
- You can substitute frozen peaches (thawed and drained).
