These Peach Crumb Bars combine a buttery shortbread crust, a juicy cinnamon-spiced peach filling, and a crisp golden crumble topping. They’re easy to make, perfect for summer gatherings, and delicious served on their own or with a scoop of vanilla ice cream.

Crust & Crumble
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 170 g (3/4 cup) unsalted butter
- 1 large egg
- 1 tsp vanilla extract
Peach Filling
- 3 cups diced fresh peaches
- 2 tbsp cornstarch
- 1/4 cup granulated sugar
- 1 tbsp lemon juice
- 1/2 tsp ground cinnamon
Instructions
- Preheat the oven to 350°F (180°C) and line an 8×8-inch baking pan with parchment paper.
- In a large bowl, combine the flour, granulated sugar, brown sugar, baking powder, and salt.
- Add the butter, egg, and vanilla extract, mixing until a crumbly dough forms.
- Press two-thirds of the dough evenly into the prepared pan to form the crust.
- In another bowl, toss the diced peaches with the sugar, cornstarch, lemon juice, and cinnamon.
- Spread the peach mixture evenly over the crust.
- Sprinkle the remaining crumb mixture over the peaches.
- Bake for 35–40 minutes, or until the topping is lightly golden and the filling is bubbling.
- Cool completely before slicing into bars and serving.
Notes
Use ripe but firm peaches for the best texture.
Let the bars cool completely for clean slices.
If using frozen peaches, thaw and drain them well first.
Store leftovers in an airtight container in the refrigerator for up to 5 days.
These bars freeze well for up to 3 months.
