  • 1/2 teaspoon ground cinnamon

Instructions

  1. In a large bowl, whisk together the eggs, cottage cheese, pumpkin puree, maple syrup, and vanilla until well combined. For a smoother texture, add the ingredients to a blender instead.
  2. Add the flour, baking powder, and cinnamon. Mix gently until combined. If using a blender, all the batter ingredients can be blended together until smooth.
  3. Fold in chocolate chips, chopped nuts, or other desired mix-ins, if using.
  4. Heat a large skillet or griddle over medium-low heat. Lightly grease it with butter or cooking oil.
  5. Scoop about 1/4 cup of batter onto the skillet for each pancake, leaving approximately 2 inches between pancakes.
  6. Cook for 3–5 minutes on the first side. Flip carefully and cook for another 3–5 minutes, or until both sides are golden brown and the centers are cooked through.
  7. Remove from the skillet and serve warm with maple syrup, butter, or your favorite toppings
