Description

Roasted Carrot and Lentil Salad with Hummus is a vibrant, nourishing dish featuring caramelized spiced carrots, tender lentils, and creamy hummus for a flavor-packed, wholesome meal.

Ingredients

Scale

Roasted Carrots

  • 3 large carrots, sliced into thick coins
  • 1 large shallot, thinly sliced
  • 2 tbsp olive oil
  • 1 tsp maple syrup or honey
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1/4 tsp cinnamon
  • 1/2 tsp kosher salt

Lentil Salad

  • 1 cup dry French lentils
  • Kosher salt
  • 2 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 34 Medjool dates, pitted and finely chopped
  • 1/4 cup Castelvetrano olives, pitted and chopped
  • 1/4 cup salted roasted almonds, chopped (optional)
  • 1/4 cup flat-leaf parsley, finely chopped
  • 2 tbsp fresh mint, chopped

To Serve

  • Hummus
  • Olive oil (for drizzling)

Instructions

  1. Preheat oven to 400°F and line a sheet pan.
  2. Toss carrots and shallots with olive oil, maple syrup, spices, and salt. Spread evenly and roast for 25–30 minutes, tossing halfway, until tender and caramelized.
  3. Bring 4 cups of salted water to a boil. Add lentils and simmer for 20–25 minutes until tender but not mushy. Drain excess water.
  4. Let lentils cool slightly, then mix with olive oil, red wine vinegar, Dijon mustard, dates, olives, almonds, parsley, and mint. Season with salt to taste.
  5. Spread hummus on a serving plate, top with lentil salad and roasted carrots. Drizzle with olive oil and serve.

Notes

  • Use French lentils for best texture—they hold their shape beautifully.
  • Don’t overcrowd the pan when roasting carrots; this helps them caramelize instead of steam.
  • Add a squeeze of fresh lemon juice before serving for a bright flavor boost.
  • Store leftovers in the fridge for up to 4 days.
