- ¾ cup crumbled feta cheese
- ¼ cup honey
- 1 tablespoon chopped fresh parsley
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Slice the sweet potato into ½-inch thick rounds.
- Toss the rounds with olive oil, salt, black pepper, and smoked paprika until evenly coated.
- Arrange the sweet potato slices in a single layer on the prepared baking sheet.
- Roast for 25–30 minutes, flipping halfway through, until tender and golden brown.
- Remove from the oven and let cool slightly.
- Transfer to a serving platter.
- Sprinkle crumbled feta cheese over the warm sweet potatoes.
- Drizzle lightly with honey.
- Garnish with chopped parsley and serve warm or at room temperature.
