- 1 small rotisserie chicken, meat pulled and shredded
- 3 medium zucchini, diced
- 1 (6-ounce) box chicken-flavored Stove Top stuffing mix, dry
- 1/2 cup butter, melted
- 1 (10-ounce) can cream of chicken soup
- 1/2 cup sour cream
Instructions
- Preheat the oven to 350°F. Lightly grease a 9×13-inch baking dish.
- Add the melted butter and dry stuffing mix to a large bowl. Stir until the stuffing is evenly coated with butter.
- Set aside half of the stuffing mixture to use for the topping.
- Add the shredded rotisserie chicken, diced zucchini, cream of chicken soup, and sour cream to the remaining stuffing mixture.
- Stir until the chicken and zucchini are evenly coated and everything is well combined.
- Spread the mixture evenly into the prepared baking dish.
- Sprinkle the reserved buttered stuffing mixture evenly over the top.
- Bake uncovered on the middle oven rack for 35–45 minutes, until the casserole is heated through and the topping is crisp and golden brown.
- Let the casserole rest for 5–10 minutes before serving.
Notes
- Use the stuffing mix dry; do not prepare it according to the package directions.
- Medium zucchini work best. Very large zucchini can contain extra water and seeds.
- If your diced zucchini seems especially wet, gently pat it dry with paper towels before mixing.
- Both white and dark rotisserie chicken meat can be used.
- For extra flavor, add black pepper, garlic powder, parsley, or thyme.
- Shredded cheddar, mozzarella, or Monterey Jack can be added beneath the stuffing topping.
- Store leftovers promptly in an airtight container in the refrigerator for 3–4 days.
- Reheat in the oven at 350°F for the crispiest topping.
