Description

This easy Rotisserie Chicken & Zucchini Casserole combines tender shredded chicken, fresh zucchini, creamy chicken soup, sour cream, and buttery stuffing. Baked until hot and golden, it’s a cozy family-friendly dinner that turns simple ingredients into satisfying comfort food.

  • 1 small rotisserie chicken, meat pulled and shredded
  • 3 medium zucchini, diced
  • 1 (6-ounce) box chicken-flavored Stove Top stuffing mix, dry
  • 1/2 cup butter, melted
  • 1 (10-ounce) can cream of chicken soup
  • 1/2 cup sour cream


Instructions

  1. Preheat the oven to 350°F. Lightly grease a 9×13-inch baking dish.
  2. Add the melted butter and dry stuffing mix to a large bowl. Stir until the stuffing is evenly coated with butter.
  3. Set aside half of the stuffing mixture to use for the topping.
  4. Add the shredded rotisserie chicken, diced zucchini, cream of chicken soup, and sour cream to the remaining stuffing mixture.
  5. Stir until the chicken and zucchini are evenly coated and everything is well combined.
  6. Spread the mixture evenly into the prepared baking dish.
  7. Sprinkle the reserved buttered stuffing mixture evenly over the top.
  8. Bake uncovered on the middle oven rack for 35–45 minutes, until the casserole is heated through and the topping is crisp and golden brown.
  9. Let the casserole rest for 5–10 minutes before serving.

Notes

  • Use the stuffing mix dry; do not prepare it according to the package directions.
  • Medium zucchini work best. Very large zucchini can contain extra water and seeds.
  • If your diced zucchini seems especially wet, gently pat it dry with paper towels before mixing.
  • Both white and dark rotisserie chicken meat can be used.
  • For extra flavor, add black pepper, garlic powder, parsley, or thyme.
  • Shredded cheddar, mozzarella, or Monterey Jack can be added beneath the stuffing topping.
  • Store leftovers promptly in an airtight container in the refrigerator for 3–4 days.
  • Reheat in the oven at 350°F for the crispiest topping.
