  • 3 cups elbow macaroni
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1/2 cup red bell pepper, finely chopped
  • 1/2 cup green bell pepper, finely chopped
  • 1/2 cup red onion, finely chopped
  • 1/2 cup celery, diced
  • 1/4 cup dill pickles, diced
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup green onions, sliced
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  1. Cook the elbow macaroni according to package instructions until al dente. Drain and rinse under cold water to cool completely.
  2. In a large mixing bowl, whisk together mayonnaise, sour cream, Dijon mustard, and apple cider vinegar until smooth and creamy.
  3. Add the chopped red bell pepper, green bell pepper, red onion, celery, and dill pickles to the dressing mixture. Stir well to combine.
  4. Add the cooled macaroni and toss until evenly coated in the dressing.
  5. Fold in shredded cheddar cheese, green onions, garlic powder, and smoked paprika. Mix gently.
  6. Season with salt and pepper to taste.
  7. Cover and refrigerate for at least 1 hour before serving to allow the flavors to blend together.
  8. Stir before serving and garnish with extra cheddar cheese and green onions if desired.

Notes

Chill the salad for at least 1 hour for the best flavor and texture.

Do not overcook the macaroni or the salad may become mushy.

Add a spoonful of mayo before serving if the pasta absorbs too much dressing during chilling.

Smoked paprika adds bold BBQ-style flavor, but regular paprika can also work.
