- 3 cups elbow macaroni
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 1/2 cup red bell pepper, finely chopped
- 1/2 cup green bell pepper, finely chopped
- 1/2 cup red onion, finely chopped
- 1/2 cup celery, diced
- 1/4 cup dill pickles, diced
- 1/2 cup shredded cheddar cheese
- 1/4 cup green onions, sliced
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
Instructions
- Cook the elbow macaroni according to package instructions until al dente. Drain and rinse under cold water to cool completely.
- In a large mixing bowl, whisk together mayonnaise, sour cream, Dijon mustard, and apple cider vinegar until smooth and creamy.
- Add the chopped red bell pepper, green bell pepper, red onion, celery, and dill pickles to the dressing mixture. Stir well to combine.
- Add the cooled macaroni and toss until evenly coated in the dressing.
- Fold in shredded cheddar cheese, green onions, garlic powder, and smoked paprika. Mix gently.
- Season with salt and pepper to taste.
- Cover and refrigerate for at least 1 hour before serving to allow the flavors to blend together.
- Stir before serving and garnish with extra cheddar cheese and green onions if desired.
Notes
Chill the salad for at least 1 hour for the best flavor and texture.
Do not overcook the macaroni or the salad may become mushy.
Add a spoonful of mayo before serving if the pasta absorbs too much dressing during chilling.
