Instructions
- Cook the shrimp:
Season shrimp with salt and pepper. Heat 1 tbsp olive oil in a large skillet over medium-high heat. Cook shrimp for 2–3 minutes per side until pink and slightly golden. Remove and set aside. - Sauté the garlic:
In the same skillet, add butter and remaining olive oil. Stir in minced garlic and cook for about 1 minute until fragrant. - Toast the orzo:
Add the orzo to the skillet and stir for 1–2 minutes to lightly toast it, enhancing its flavor. - Simmer:
Pour in chicken broth and bring to a gentle simmer. Cook for 8–10 minutes, stirring occasionally, until the orzo is tender and creamy. - Add greens and cheese:
Stir in spinach until wilted. Add Parmesan cheese and lemon juice, mixing until smooth and creamy. - Combine:
Return shrimp to the skillet and spoon sauce over the top. Let everything warm through for 2 minutes. - Finish and serve:
Top with parsley, lemon slices, and red pepper flakes if desired. Serve warm.
Notes
Don’t overcook the shrimp—they cook fast and stay juicier when removed early.
If the orzo thickens too much, add a splash of broth to loosen it.
