Description

These Slow Cooker Beef Ramen Noodles combine savory ground beef, tender ramen noodles, carrots, red bell pepper, and scallions in a rich, sweet-and-savory garlic soy sauce. An easy slow cooker dinner made with simple ingredients and plenty of family-friendly flavor.

  • 1 pound ground beef
  • 1 cup matchstick carrots
  • 1 red bell pepper, sliced
  • 23 scallions, roughly chopped
  • 3 garlic cloves, minced
  • 1/2 cup low-sodium soy sauce
  • 1/2 cup brown sugar
  • 1 (14.5-ounce) can chicken stock
  • 2 packages ramen noodles, seasoning packets discarded
  • Sesame seeds, for garnish (optional)
  • Sliced scallions, for garnish (optional)


Instructions

  1. Heat a skillet over medium heat. Add the ground beef and cook, breaking it into small pieces, until browned and cooked through. Drain the excess grease.
  2. Transfer the browned ground beef to the slow cooker.
  3. Add the matchstick carrots, sliced red bell pepper, and chopped scallions.
  4. In a medium bowl, whisk together the minced garlic, low-sodium soy sauce, brown sugar, and chicken stock.
  5. Pour the sauce over the beef and vegetables. Stir well to combine.
  6. Cover and cook on LOW for 4–6 hours.
  7. About 30 minutes before serving, add the dry ramen noodles to the slow cooker. Discard the seasoning packets.
  8. Stir the noodles frequently as they cook so they are evenly coated with the sauce and become tender.
  9. Once the ramen noodles are tender, give everything a final stir and serve immediately.
  10. Garnish with additional sliced scallions and sesame seeds, if desired.

Notes

  • Discard the ramen seasoning packets. The homemade garlic-soy sauce provides all the seasoning needed.
  • Use low-sodium soy sauce to help control the saltiness of the finished dish.
  • Drain the ground beef well before adding it to the slow cooker to prevent the sauce from becoming greasy.
  • Don’t add the ramen noodles at the beginning. They should go in during approximately the final 30 minutes so they don’t become overly soft.
  • Check the noodles before the full 30 minutes has passed, since cooking times can vary by ramen brand and slow cooker.
  • For extra vegetables, try mushrooms, broccoli, shredded cabbage, snap peas, or baby spinach.
  • For a spicy version, add red pepper flakes or your favorite chili sauce.
  • Leftovers can be refrigerated in an airtight container for 3–4 days. The noodles will continue absorbing sauce as they sit, so add a splash of chicken stock or water when reheating.
