Slow Cooker Cowboy Casserole is a hearty comfort food dinner made with ground beef, tender potatoes, beans, corn, tomato sauce, and melted cheese. This easy slow cooker recipe is perfect for busy weeknights, meal prep, or cozy family dinners.

- 1 pound ground beef
- 4 cups potatoes, chopped
- 1 can (15 ounces) kidney beans, drained and rinsed
- 1 can (15 ounces) corn, drained
- 1 can (15 ounces) tomato sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup shredded cheddar cheese
- Sour cream, for garnish
- Chopped chives, for garnish
Instructions
- Heat a skillet over medium heat and cook the ground beef until browned. Drain excess grease.
- Chop the potatoes into bite-sized pieces.
- Place the potatoes in the bottom of the slow cooker.
- Add the cooked ground beef, kidney beans, and corn.
- Pour the tomato sauce evenly over the ingredients.
- Sprinkle garlic powder, onion powder, smoked paprika, salt, and pepper on top.
- Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours until the potatoes are tender.
- During the last 30 minutes, sprinkle shredded cheese over the casserole and cover until melted.
- Garnish with sour cream and chopped chives before serving.
Notes
Yukon Gold or Russet potatoes work best.
For extra spice, add diced jalapeños or red pepper flakes.
Store leftovers in an airtight container for up to 4 days.
