  • 6 tbsp (85 g) unsalted butter, melted
  • 5 cloves garlic, minced
  • 1 tsp dried Italian herbs
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1/4 cup fresh parsley, chopped

For the Potatoes:

  • 2 lbs (900 g) baby Yukon Gold potatoes, halved
  • 1/2 cup (120 ml) low-sodium beef broth

Optional Add-Ins:

  • 1 medium onion, sliced
  • 1 cup carrots, chopped

Instructions

  1. Prep the Beef:
    Pat beef dry and season generously with salt and pepper.
  2. Sear the Beef (Optional):
    Heat olive oil in a skillet over medium-high heat. Sear beef chunks for 2–3 minutes per side until browned.
  3. Layer in Slow Cooker:
    Place potatoes at the bottom, then add beef on top. Add onions and carrots if using.
  4. Make Garlic Butter Sauce:
    Mix melted butter, garlic, herbs, red pepper flakes, and parsley in a bowl.
  5. Add Broth & Sauce:
    Pour broth over ingredients, then drizzle garlic butter sauce evenly. Toss gently.
  6. Slow Cook:
    Cook on LOW for 7–8 hours or HIGH for 4–5 hours until beef is tender.
  7. Finish:
    Adjust seasoning. Thicken sauce by mashing a few potatoes if needed.
